Oven Baked Salmon with Cream Cheese

Take out serving size, about 125g, salmon bites out of your freezer - and if you don't have serving sized- , and instead you have bigger bites, you have probably made the right choice as serving size salmon bites are very expensive. You put these bites on a plate that you place in your fridge to let the salmon bites melt. If your salmon isn't split into serving sized bites you just cut it that way.

This recipe will, by the way, be a two-in-one; two different ways of preparing salmon.

Accompanying the salmon will be a scramble of cottage/cream cheese, garlic and herbs (if you like scrambles this recipe will be awesome for you.

Ingredients
100g cream cheese
2 slices garlic
2table spoons mixed herbs

Mix the ingredients thoroughly and taste with salt and pepper. Spread a part of it on one of the salmon bites and save the rest for the serving later.

The other salmon bite I spice with salt, pepper and lemon pepper.

Put the pieces of salmon in a ovenproof dish that has been slightly oiled, and put it in the oven for 20minutes on 200C. If you're unsure whether this time was enough, split the salmon with a fork to see if it is finished; if it looks raw put it in for another however many minutes you think will do for it to look lackluster pink, which it does as it's ready. Make the evaluation of the time needed carefully though, as salmon gets really dry if it's in the oven for too long a time.

Salmon Christmas Recipes Using Hot Smoked Salmon

Here is another really easy Christmas recipes using smoked salmon. It is the perfect recipe for canapes when having friends round for a drinks party at Christmas or New Year.

Hot Smoked Salmon Dip


Ingredients - serves 10 - 20
  • 8oz/250g Hot smoked salmon
  • 2 - 3 tabsp cream cheese
  • 2 - 3 tabsp good mayonnaise
  • salt & pepper
Method
Mash the smoked salmon in a bowl with a fork. Add the cream cheese and mayonnaise. Mix together and season with salt and pepper to taste.
Adjust the amount of cream cheese and mayonnaise to suit your own taste.
As a delicious alternative you could try adding chopped chives or dill.
Lemon juice and/or cayenne pepper also makes a tasty alternative.
To make this smoked salmon recipes for dips into a smoked salmon spread recipe just decrease the amount of mayonnaise until you have the desired consistency. My children love this spread onto bread with sliced cucumber to make sandwiches.
Of course you can also use the smoked salmon spread recipe on thick rounds of cucumber and serve them as an appetizer or as part of a buffet or party table.

Easy Christmas Salmon Recipes

Salmon: The CookbookThis is really easy and requires only 3 ingredients.

1 packet of puff pastry

1 pack of 250g (9oz) smoked salmon trimmings or slices

8 spring onions finely chopped.

Roll out the pastry and cut into 2 pieces to make it easier to work with. Place the smoked salmon all over the pastry and sprinkle with the chopped spring onions. Sprinkle with fresh ground black pepper. Starting from the long side roll up like a swiss roll. Using a sharp knife cut the rolls into fairly thin rounds of about 1/4" thick. Place onto greased baking trays and bake in a hot oven (200C) for around 15 - 20 minutes or until the pastry is golden brown. Transfer to a wire rack to cool before serving. They are also good for freezing, just thaw for around 3 hours. They'll also keep for about 1 week in an airtight container. This recipe is from Mary Berry At Home

Smoked Salmon Swizzles


1 packet smoked salmon

cocktail sticks

lemon juice

black pepper



Simply slice the smoked salmon into strips and slide onto the cocktail sticks in a concertina fashion. Sprinkle with fresh lemon juice and a grinding of black pepper.


Smoked Salmon Blini

1 pack smoked salmon

1 tub sour cream

fresh dill - chopped finely

1 packet of buckwheat blini

small jar of salmon roe

Cut the smoked salmon into small pieces. Warm the blini according to the packet instructions and place a scant teasp of sour cream onto each blini followed by a piece of smoked salmon and a little chopped dill. Finish with a small amount of salmon roe. Best served with either vodka or champagne.
