Oven Baked Salmon with Cream Cheese

Take out serving size, about 125g, salmon bites out of your freezer - and if you don't have serving sized- , and instead you have bigger bites, you have probably made the right choice as serving size salmon bites are very expensive. You put these bites on a plate that you place in your fridge to let the salmon bites melt. If your salmon isn't split into serving sized bites you just cut it that way.

This recipe will, by the way, be a two-in-one; two different ways of preparing salmon.

Accompanying the salmon will be a scramble of cottage/cream cheese, garlic and herbs (if you like scrambles this recipe will be awesome for you.

Ingredients
100g cream cheese
2 slices garlic
2table spoons mixed herbs

Mix the ingredients thoroughly and taste with salt and pepper. Spread a part of it on one of the salmon bites and save the rest for the serving later.

The other salmon bite I spice with salt, pepper and lemon pepper.

Put the pieces of salmon in a ovenproof dish that has been slightly oiled, and put it in the oven for 20minutes on 200C. If you're unsure whether this time was enough, split the salmon with a fork to see if it is finished; if it looks raw put it in for another however many minutes you think will do for it to look lackluster pink, which it does as it's ready. Make the evaluation of the time needed carefully though, as salmon gets really dry if it's in the oven for too long a time.

Easy Christmas Salmon Recipes

Salmon: The CookbookThis is really easy and requires only 3 ingredients.

1 packet of puff pastry

1 pack of 250g (9oz) smoked salmon trimmings or slices

8 spring onions finely chopped.

Roll out the pastry and cut into 2 pieces to make it easier to work with. Place the smoked salmon all over the pastry and sprinkle with the chopped spring onions. Sprinkle with fresh ground black pepper. Starting from the long side roll up like a swiss roll. Using a sharp knife cut the rolls into fairly thin rounds of about 1/4" thick. Place onto greased baking trays and bake in a hot oven (200C) for around 15 - 20 minutes or until the pastry is golden brown. Transfer to a wire rack to cool before serving. They are also good for freezing, just thaw for around 3 hours. They'll also keep for about 1 week in an airtight container. This recipe is from Mary Berry At Home

There's an informative table included which shows you just how much better salmon is for you than some other types of coldwater fish (such as tuna). Omega 3 and Alzheimers

In the News

Omega 3 and Alzheimers

A diet that is balanced and full of antioxidants is the best way to boost the immune system which in turn helps to ward off Alzheimers and cleanse potentially harmful plaques that could be building up in your brain.

Essential Fatty Acids are the number one immune system builder and Omega 3 and Omega 6 fatty acids are necessary to promote optimal health. A fish oil supplement is the best source of fatty acids since most modern-day diets don't normally contain enough fish to provide these nutrients.

I give my 8yr old twins 1 capsule of MorEHA Junior capsules twice a day, it doesn't taste at all fishy and because it's a softgel capsule it goes down rather easier than the normal tablets - don't you just hate it when tablets start disolving in your mouth before you've swallowed them?

Shoppers Confused by the Supermarkets

As usual, the supermarkets are jumping on the bandwagon selling 'fortified' foods. Well you can't always believe everything the supermarkets tell you and here's a classic case in point. full story

If you're thinking about taking an Omega 3 supplement Great Salmon Recipes has recommended 2 sites that sell a high grade fish oil.

Omega 3 Uses

According to the BBC Radio 2 program yesterday the government is thinking about proposing that schools administer fish oil supplements to all pupils. Now whilst the trials that have been done so far on Omega 3 have proved really positive with aiding children's concentration and an apparent increase in reading age and ability, is it really down to the government to decide whether children get a supplement or not? Surely it is the parents duty and choice to decide for themselves what they want to give their children?

However, if you are considering getting a supplement to give your child or perhaps to take yourself like I do if you click on the link above this post it will take you to a good nutrition page where there are 2 links for Omega 3 supplements, one for the UK and one for the USA. Both these companies sell a pharmaceutical grade fish oil. You have to be careful when buying fish oil, just because the label says 1000mg fish oil does not mean that it's 1000g Omega 3 fatty acids. Check for a high concentration of fish oils. The cheapest doesn't necessarily mean the best, all that will happen is you have to take more of the product and therefore buy more of the product in the first place. The company I recommend in the UK - Health and Essential Ltd has also been featured on "This Morning" and in "The Times".

For USA shoppers I've recommended

Poached Salmon Recipes

Poached Salmon Recipes

Summer's fast approaching and my thoughts are turning to cool, summer recipes such as poached salmon with hollandaise sauce, what you could do with this is let the salmon go cold, mix with the hollandaise and a few finely chopped herbs such as chives and dill (both go well with salmon) and serve as perhaps a pate on melba toast or in sandwiches with thinly sliced cucumber. Instead of hollandaise, why not just mix with mayonnaise, salt & pepper, a squeeze of lemon and some chopped herbs if you wish. Another idea would be to pile it into a bowl and serve with a green or mixed salad so that everyone can help themselves. Here's somelinks for delicious poached salmon recipes.

New Salmon Recipe Links

I know I've been a bit lax posting recently. The boys have finally gone back to school having spent most of the holidays playing in the nearby woods looking for fossils by the river and trying to catch fish without any success. (as they didn't have rods it may well have been difficult!) OK, enough chitchat, on with some more delicious salmon recipes. This time it's the turn of Grilled salmon recipes, I hope you like them.

My Salmon Recipe site's growing in leaps and bounds, the traffic increases daily, and by the end of the month with have again doubled. How amazing is that! Once again, I have to say that without the hand holding of SBI I wouldn't have known where to start.

I've been looking around the web lately on other ways to build websites, but none really come close for hosting, all in one tools and help and support. If you're thinking of starting a website, maybe you should have a look over at SBI. At the moment they've got a really fabulous offer until May 1st. Go on, have a look, you know you want to and it doesn't cost to look, now does it? Here's the link

BBQ Salmon Recipes

Oh Boy, it's the Easter Holidays and the boys have been off school since March 24th. The days seem to be filled with finding things to do to keep them out of mischief so I've not really had much time for blogging or doing much to the salmon recipes website. However, they've now decided to make the living room their den and have brought their duvets down. Therefore I have a couple of minutes to give you a few links to a couple more BBQ Salmon recipes. Hope you like them.
